This bread spice is very commonly used in darker austrian bread. Personally I do not use it that much, though I enjoy it from time to time.
Ingredients
- 6g coriander
- 6g anise
- 6g fennel
- 9g caraway
Instructions
Blend all ingredients. While in general I would suggest to heat the seeds in a non oiled pan for a few minutes first, I don’t like to do that in this case. It alters the taste quite a bit and is not what we want to archive here.
Tips
Optional additions also often used in addition:
- pepper
- cardamon
- nutmeg
