Potato Chips

Best potato chips that I have ever eaten! Period. Also one of the most annoying processes of making comfort food I have ever tried and I’m still not sure if it was worth my time. If you love potato chips and have some time to spend give it a try and decide yourself if it was worth yours.

Ingredients

  • 3 big potatoes
  • 1 tsp salt
  • 1 tsp pepper
  • 150g oil

Instructions

Peel the potatoes and slice them in very, very thin slices. Let the slices soak in water for at least an hour. This will remove a lot of stark from them. This step is crucial if you want to end up with real chips.

Afterward wash them with cold water. Let them sit in a sieve so the water can drip off for at least 15 minutes.

Now to the annoying part: drying them. Using some kitchen towels you have to get them as dry as possible. Once you archived that, mix the other ingredients together. For the oil I used mainly rapeseed oil and a bit of olive oil just for taste. I would not use pure olive oil, that would give a too intense taste.

Now mix half of the potato slices and half of the oil mix in a big bowl. The potatoes should be fully covered in oil. There should be some oil left at the bottom of the bowl. If not, add more.

Preheat the oven to 175 degrees. Place the potato slices on a backing tray. They should not overlap each other! Bake them for about 30 minutes. Depending on the thickness of your slices that may vary a bit. If your slices are not equal, some might get brown earlier. In that case remove the darker chips and let the others in the oven for a few minutes more.

Afterward repeat the process with the other half.

Tips

If you use kitchen towels for drying the potatoes wash (or at least dry) them shortly afterward.
