
Due to dried date paste I had to be creative and alter my normal granola bar recipe. The result was actually pretty nice. Still room to improve, but a very nice oat flake based version never the less.
The date paste I used was super dry and I did not realize I could just hydrate it with a bit of water up front. I tried to follow my normal recipe, but the bars would not stick together at all. I soaked oat flakes in water, mixed everything and let it dry out in the oven for 1h at 150 degrees. This worked, however there still werer bigger date lumps.
Next time soak the date past up front.
Ingredients

60g hazelnuts

60g almonds

75g sesame

300g datepaste

25g habanero honey

dash of salt

20g coconut oil

30g sunflower seeds

500g oat flakes
-
300g water
Instructions
Soak the date paste with all of the water. Mix it until it gets smooth. Add the oil salt and honey and mix again. Add the oat flakes and wait until they fully soaked up the water.
Now add the rest of the ingredients. Press them flat on a baking tray and bake the mass in a preheated oven at 150 degrees for about 20 minutes. Cut the mass into bars, place them on two baking trays upside down and let them bake for another 10-15 minutes.
Let them cool down and store them in an airtight container.
If they do feel humid after a day, let them rest outside to dry out some more. If they hold too much liquid, they might get mold. If they are too dry, place a slice of apple inside the container for a day. This should soften them up again.
