Caramelized Condensed Milk

Condensed milk was bad tasting milk that my grand parents would pour into their coffee. I was wrong. Self made caramelized condensed milk has nothing to do with that kind of milk. Its sweet and delicious, think melted butterscotch. Its an amazing base ingredient for a lot of sweets and desserts and I will use this in several desserts in the near future.

Ingredients

  • 1kg whole milk
  • 250g sugar
  • 125g sweet cream
  • 2g salt

Instructions

Mix everything together in a big pot. Let it come to a boil and immediately reduce the heat. You want to keep the mix at a good simmer. Your goal is to reduce the overall weight to 1/3 of the start weight. For me it took about 50 minutes. If you have a pod with liter marks you are good to go. Otherwise weight your pot up front so you can weight the current weight of the mix afterward.

Let it fully cool down afterward.

You can store the caramelized condensed milk in the fridge for up to one week. In case you do not use all of it within a week you can also freeze it. Let it unfreeze in the fridge over night slowly.
