This pasta dough is very easy to get right and can be used with a pasta cutters without risk of sticking in the machine. Thanks for the recipe Hubsi.
This is a very basic and very simple pasta dough. The main goal here is to create a good dough that does not require hand kneading and can easily bet cut in a pasta maker without making a mess.
Ingredients
- 150g fine wheat flour
- 150g fine wheat semolina
- 1tbsp oil
- 1tsp salt
- 3 eggs
Instructions
Put the flour and semolina in a dry bowl. Form a hole in the middle and add the other ingredients. Let the mixer knead the dough on the lowest setting and wait for about 8 minutes in total. The dough will start to form in the middle while a lot of dry flour will be left around. Do not push it in. It will get mixed in bit by bit, just let the machine do its thing. Once all flour is incorporated let it knead for 2 more minutes.
Afterward let the dough rest in the fridge for at least one hour. This step is requires especially if you use a pasta machine to cut it. The semolina will absorb quite some fluid in this period making the dough less sticky. If possible, prepare the dough a few hours before usage.
Tips
Depending on which machine you use to knead the dough it can make sense to make two portions after each other instead of just doubling the ingredients. In my case the machine struggled to pick up some of the flour and I had to hand knead it in. As there is not much
