Basil Pesto & Salt

I love basil. Usually I do make basil salt to be able to enjoy it all year long. Though as I had an incredible harvest this year I decided to make basil pesto as well.

Ingredients

  • 60g fresh basil
  • 60g parmesan
  • 60g pine nuts
  • 40g olive oil

Instructions

Start by blending the basil and the olive oil. Afterward add the pine nuts. While you could also blend the parmesan, I rather rasp it per hand and add mix it in per hand afterward. I just like the texture better than blending everything together to a smooth paste.

Note: 40g olive oil is quite less and the resulting pesto is quite dry. If you want to use this pesto only for pasta you might want to add more oil right away. If you want to use it for other dishes however this dry variant might be the better option.

For pasta I usually either mix the pesto with oil before serving or, as seen in the picture, serve a table spoon of dry pesto and top the pasta of with a some additional olive oil.

Basil Salt

  • 50g basil
  • 100g salt

Blend the ingredients and let them dry on a big plate. Once dried, blend them again for a smooth salt.
