Second attempt on creating a granola bar with peanut butter. The recipe is not quite there and requires some more tweaking, though is a good baseline for further experiments.

- 300g salted peanuts
- 1tbsp coconut oil
- 130g honey
- 200g nut mix
- 50g roasted peanuts
- 150g crushed oatmeal
The crushed oatmeal is the better choice for sure. The other changes are up to debate and mostly depend on what one wants to archive. The increased amounts of salted peanuts and the addition of roasted peanuts give a way more intense flavor. Personally its a bit too intense, though most people seem to like it. I would not reduce the honey that much, if at all, again in my next try. 180g should do fine.

For this one I tried to increase the nut content. It was more delicious and in my opinion way better, though it was harder to cut and the bars did break easier.

- 250g nut mix
- 160 salted peanuts
- 180g honey
- 2 tbsp coconut oil

This version is quite sweet. I added 210g honey but 160-180 should be enough. Due to the honey overload it was very easy to cut and held together very well. Potentially using crushed oatmeal would make it a bit softer and a bit more like a Clifbar.
- 225g oatmeal
- 150g nut mix
- 200 salted peanuts
- 210g honey
- 2 tbsp coconut oil
Instructions
Blend the salted peanuts and the coconut oil until smooth (you can substitute normal peanut butter instead). Prepare a baking form with a sheet of baking paper inside. Heat the honey and the peanut butter in a pot until it starts to simmer. Reduce the heat to medium and let it simmer for about 1 minute. Stir constantly so the butter does not burn. Remove the pot from the heat and add all other ingredients and mix them together well. Pour the mass into the baking form and press it in shape.
As an optional step you can preheat the oven to 175 degrees and bake the bars for about 15 minutes.
Let them cool down for an hour and place it in the fridge afterward for at least another one.
Once fully cooled you can easily remove the big bar and cut it into suitable sized peaces. Keep the bars in the fridge. They should hold up for two weeks with ease.
Tips
Do not use sugar instead of honey. I tried to do this to save honey in case something goes wrong. However, the sugar peanut butter mix is not fluid enough and instead of nice bars I ended up with a very very sweet variation of this.
