Hazelnut & Cocoa Granola Bar

In my third variation of a granola bar I tried to get something chocolaty. The consistency was pretty nice, though there are a few tweaks I would change the next time.

Ingredients

This version is quite sweet. 150g honey was too much for this recipe. Rather go with 100g instead. Also I did not like the oatmeal in this bar that much. Next time try to use coconut flakes instead.

  • 150g crushed oatmeal (replace with coconut flakes)
  • 200g nut mix
  • 200g roasted hazelnut
  • 150g honey (too much, use 100 instead!)
  • 25g coconut oil
  • 10g cocoa (potentially more?)

Instructions

Roast the hazelnuts and remove some of the skin by rubbing the hot nuts in a kitchen towel (see hazelnut cream for more detailed instructions). Blend the hazelnuts, honey and coconut oil to a fine mass. Add the cocoa powder and mix all other ingredients in by hand.
