Making your own yogurt is super simple, does only take two ingredients and basically no time.
Ingredients
- 1l farmers milk
- 50g yogurt with active cultures
Instructions
- heat the milk up to 80 degrees
- let it cool down to 45 degrees
- mix in the yogurt
- fill into jars and close them
- let it rest between 6 to 12 hours at 40-45 degrees in a dark environment
Note:
Tips
Turning on the oven light will heat up the oven slightly, often above 40 degrees. With my oven I can also set it to the lowest possible setting on top heat and place the jars in the lower part. Best test this with some water filled jars first to ensure they keep within the wanted temperature range over time.
both ways are potential alternative to a yogurt maker or a fermentation box to hold the temperature. Cover the jars with a kitchen towel as they should ferment in the dark.
The best temperature would be above 40 degrees, though it does also work with 30+ degrees.
You can use some of your yogurt to start the next batch.
Lesions Learned
For my latest batch I used too much yogurt to start with (30% more than required). With an average temperature of 43 degrees for 10 hours the result was too sour and I tossed it.
