This is one of the unhealthiest but best cakes Ive made in a long time. The combination of lemon sugar and poppy is insanely good. Also its gluten free, in case you are in need of a gluten free dessert.
Ingredients
Dough:
- 6 eggs
- 170g sugar
- 30g selfmade vanilla sugar
- 200g butter
- 200g poppy seeds (check, popentially 400g!!)
- 80g almonds
- 20g walnuts
- 1/2pkg baking powder
- dash rum
Icing:
- 40g lemon juice (ca. 1 big lemon)
- 160g powdered sugar
Instructions
Dough: Separate the egg whites. Melt the butter, grate the nuts and mix all other ingredients (except the egg white) together. Beat the egg whites and gently fold it under. Let it bake for about 45 minutes at 180 degrees.
Icing: Let the dough fully cool down. Mix the lemon juice and sugar and equally spread it over the cake. Let it rest in a cool place until the icing is hardened (ca 1h).
If you want to make the cake look prettier you can double the amount of glaze as well as sieve the powdered sugar.
Tips
- I made half of the amount though kept the dough pretty thin. For me it was done in 25 minutes.
- You can use different nuts, I went with almonds and walnuts as I just had them on hand.
- check if 200g is indeet correct. with oil instead of butter, using the whole egg, without beating the white and erythrit instead of sugar 200 was way too less
