This recipe started out as a joke, though ended up being something really special. Its delicious, but very, very filling. Its intended to be a dessert, though two of them usually totally fill me up, and I would consider them enough as a whole main dish.
Ingredients
Dough:
- 250g curd cheese (20% fat)
- 1 egg
- 2tbsp bread crumb
- 2tbsp wheat semolina
- pinch of salt
- 4 mozart balls
Crust:
- 60g bread crumb
- 30g fine crushed walnuts
- 15g sugar
- 15g butter
Fruit Glaze:
- 500g raspberries
- 2tbsp water
Instructions
Dough: Mix all ingredients other than the mozart balls and let them rest in the fridge for 30 minutes.
Crust: Melt the butter in a pan and add the other ingredients. Under constant stirring let them heat up until they start getting brown. Remove the pan from the heat but keep stirring for another 2 minutes to ensure that the crumbs do not burn.
Fruit Glaze: Bring the raspberries and water to a simmer. To remove the seeds mash them to a semi fine sieve.
Dumplings: Get some dough in one hand and press one Mozart ball in with the other. Fully cover it with the dough and start rolling the dumpling in your hands. Once satisfied, roll the dumpling in flour and set it aside during forming the other ones. Cook them in simmering water for 12 minutes. Afterward roll them in the prepared crust and serve them together with the fruit glaze.
Tips
- Usually you use sugar in fruit glazes. Though avoid adding sugar here. The Mozart ball and the crust is very sweet. Unsweetened fruit glaze does give an amazing balance to the dish.
- Removing the seeds from raspberries is super annoying. If you want to use other fruits, go with something sour. As stated before you need the acidity for balancing the other very sweet ingredients.
