Marble Cake

One of the most sweet and intense marble cakes Ive eaten in a long time. A real treat.

Ingredients

  • 250g butter

  • 300g selfmade vanilla sugar

  • 450g cake flour

  • 5 eggs

  • 1 pkg baking powder

  • 250g milk

  • 1tbsp espresso

  • 1tbsp rum

  • 2tbsp cocoa powder

Instructions

Start by separating the eggs and sifting the flour and baking powder. Whip the egg white until stiff. Mix the warm (not hot) melted butter egg yolks and suggar until creamy. Mix in the flour tbsp per tbsp. Now place split the flour mass in half. Mix in the espresso, rum and cocoa powder mix in one of them. Gently fold the egg white under the dough (half in the light, half in the dark dough).

Butter a baking form. In addition dust it with flour or breadcrumbs. Otherwise the dough might stick to it and rips as shown in the picture.

Add the light dough first, afterwards the dark one. Gently stir the doughs a bit so it forms the typical marbels.

Bake at 180 degrees for 40-50 minutes.

Note that the actual baking time varies depending on the baking form.

Let it fully cool down, dust it with sugar and feel the calories :)

  • dust the baking form with flour or bread crumbs, the dough stuck to it without updated recipe
  • stir a bit more next time, the marbel effect was not good enough
