Lemon bars are a pretty easy, sweet but still refreshing dessert. It is basically a shortbread crust with a lemon pudding on top. Simple, but delicious.
This recipe is heavily inspired by this recipe from baketotheroots. I reduced the sugar and increased the coconut flakes in the dough and increased the filling by about 50%.
Ingredients
Dough:
- 100g melted butter
- 50 coconut flakes
- 125g baking flour
- 75g sugar (use a bit less!)
- dash of salt
Filling:
- 225g sugar
- 40g corn starch
- 300ml water
- 3 egg yolks
- lemon zest of two big lemons
- lemon juice of two big lemons
- 40g melted butter
- 30g flour
- dash of salt
Instructions
Preheat the oven to 170 degrees.
Dough: Melt the butter and mix everything together. The dough is very crumbly. Fill it into your baking form and press it evenly on the ground. Place the dough in the preheated oven and bake it for 20 minutes, or until slightly golden.
Let the baked dough cool down a bit during making the Filling.
Filling: Mix the sugar, corn starch, water, egg yolks and salt. Bring the mixture to a boil. Stir constantly or you will burn the filling. Once it started boiling, move the mix away from the heat. Mix in the lemon zest and juice as well as the melted butter. Afterward mix in the flour. Ad just a bit of flour at a time to prevent lumps forming. Once all the flour is in, pour the mass over your pre baked dough and spread it.
Place it in the oven (still 170 degrees) and bake it for another 20 minutes.
Next time…
Remove more sugar from the dough, maybe only use 60g.
