Honeycomb Candy

Also known as sponge candy. Easy to make (done in about 10 minutes), just be sure to not burn yourself in the process!

Ingredients

  • 50g sugar
  • 5g vanilla sugar
  • 25g honey
  • 20g rice syrup (corn syrup alternative)
  • 10g baking powder (bit too much?)
  • dash of pepper

Instructions

Do measure the baking powder up front, so it is ready later on. Prepare a baking form with baking paper. Mix all other ingredients in a pot and heat it up to 150 degrees under constant stirring.

Remove the pot from the stove and stir in the baking powder. Note that this will react, create bubbles and will rise a bit. Once fully incorporated, fill the mixture to the baking form. Do not try to flatten out the mass, just let rin in.

Afterward, let it cool down to room temperature. Do not move the baking form in the meantime. Once cold, break and enjoy it.

Tips

  • a small (!) dash of pepper really complements the honey taste
  • other spices (chili?) might also be an amazing sidekick
  • adding some food color could make this very awesome
