A cake recipe that works with all kinds of frozen fruits. Most recipes only work with frozen berries, but this one was tweaked so the additional liquid gets absorbed very well.
To counteract I added some pudding powder to the dough and rolled the frozen fruits in bread crumbs. This worked very well. If you make this cake with frozen berries, do not use the bread crumbs.
Ingredients
Dough:
- 220g cake flour
- 125g melted butter
- 125g sugar
- 3 eggs
- 2 tbsp coconut flakes
- 10g vanilla pudding powder
- 1 tbsp baking powder
- 1 tsp good rum
- 3g salt
- 2 tsp lemon juice
Topping:
- 600g half frozen fruits (berries can be fully frozen)
- 60g bread crumb to roll the frozen fruit in, not required if you use frozen berries
Instructions
Start by getting the frozen goods out of the freezer. Let it thaw a bit while you prepare the rest. For the dough just mix all ingredients together. Preheat the oven to 175 degrees and prepare a baking form with baking paper before filling it with the dough.
Now mix the fruits with the bread crumbs and spread them onto the dough. Press them down gently so that they are mostly submerged.
