[W.I.P.] Easy Cherry Cake

This recipe is still work in progress. It already tastes great, but a bit more tweaking will make it really stand out.

This recipe was based on my Beginner Chocolate Cake as base.

Note: this recipe is for a half sized cake. The spring form I used is 18 cm in diagonal only. For normal sizes double the ingredients.

Ingredients

Dough

  • 150g cake flour
  • 250g milk
  • 40g cocoa powder
  • 50g selfmade vanilla sugar
  • 50g sugar
  • 60g melted butter
  • 4g salt
  • 5g baking powder
  • 1.5g baking soda
  • 1 egg
  • 200g frozen cherries
  • a bit of roughly cut chocolate to top it off (maybe 50g)

Instructions

Mix everything but the frozen cherries and the rough cut chocolate together. Preheat the oven to 180 degrees. Lightly oil a cake form, fill the dough in, spread it and top it with the frozen cherries. Press them a bit into the dough. Bake it for about 40-45 minutes.

Afterward let it cool down a bit. Add the rough cut chocolate after about 10 minutes of cooling down. The chocolate should start melting but not fully melt.

Tips

  • Note: as the cherries will lose quite some liquid it may seem as the dough in the middle is not fully baked. Though with the listed amounts and a preheated oven it definitely is.
  • Do not reduce the hydration of the base dough because of the added fruits. I reduced the milk to 150 in my first try, but the dough was way too dry. This would only work if one would add another 200g cherries in the middle of the dough.

Next Time…

  • add 100g poppy seeds
  • a chocolate, cherry liqueur cream would be pretty awesome in the middle of the cake (jam worked fine, but this would be more epic)
  • ~ the cake is too dry, add 50g milk (or liquid from pickled cherries) ~

Note: once you mix in the pudding into the boiling milk stir like crazy as this can burn very fast. Then wait a bit (still stirring) before adding the butter. Potentially mix in machine or cream will look crappy.˚
