Trying to use some left over ingredients I created this recipe. Not my favorite and I’m not going to make it again. Though got asked about the recipe a few times now so here you go ;)
In the version I made I forgott the sugar. For me it was fine in combination with some pudding or chocolate, though not great alone.
Different to my actual Bananabread recipe I did not have butter or normal cake flour, so I substituted.
To overtone the lack of ingredients I decided to add some (ground) roasted cocoa nibs, which actually was pretty nice.
Ingredients
- 3 super ripe bananas
- 50g ground roasted cocoa nibs
- 50g roasted hazelnut nibs
- 75g sugar
- 50g nutral oil
- 3 eggs
- 1tsp baking soda (ca. 6g)
- 250g spelt cake flour
- 5g salt
- 2cl good rum
Instructions
Grind the roasted cocoa nibs. Id suggest doing so in combination with some other ingredients as otherwise the powder will stick together and build a crust on the bottom of your blender. Afterward add all ingredients and mix.
Fill everything in a baking form and bake it in a preaheated oven at 175 degrees for 50 minutes.
