There are a lot of healthy, vegan or sugar free banana bread recipes out there. This is not one of them. This is a proper cake that happens to have bananas inside :)
Ingredients
- 3 ripe bananas
- 3 eggs
- 100g melted butter
- 1 tsp baking soda (ca. 6g)
- 150g selfmade vanilla sugar
- 250g cake flour
- 5g salt
- 30g coconut flakes
- 2cl good rum
Instructions
Peel and mash the bananas. Mix all ingredients except the flour together. Add the flour, fill the batter in a silicon bread form (sized for 500g flour loafes) and bake it in a preaheated oven at 175 degrees for 50 minutes.
Let it rest for 10 minutes in the foarm before placing it on a wire rack to fully cool down.
