
First try at a tarte flambee. Topping was very nice, not totally happy with the dough though.
Ingredients
Dough:
- 225g fine flour
- 110g water
- 12g (1tbsp) olive oil
- 6g (1tsp) salt
- 50g sour dough starter (for flavour only)
Topping:
- 250g sour cream
- salt and pepper to taste
- 2 onions
- 100g cubed smoked bakon
- [optional: mix in some cheese with the sour cream]
Instructions
Knead the dough ingredients together. Cover them air tight and let the dough rest in the fridge for an hour.
In the meanwhile cut the onions to slices. If possible, cut away the fat part of the smoked bakon. Then cube both parts seperatly.
Preheat a baking stone in the oven, max heat.
Heat a pan over medium heat and let the fat cubes simmer untli oil comes out. Go full heat and add the onions. If either fat cubes or onions start getting dark, remove from heat.
Mix sour cream, salt and pepper together.
Cut the dough into 4 portions. Roll the dough out as thin as possible. Spread sour cream on top, add 1/4 of the cubed bakon and browned onions.
Place in the oven until the edges of the dough get golden.
Next Time…
- Not sure if the sourdough makes much sense in this dish. The dough is more humid than without, and thats generally not what you want. Try it without next time
