
This is an amazing spicy and very refreshing cucumber salad from korea. This does not work as side dish for western dishes, but amazingly for most asian ones.
Ingredients
- cucumber
Dressing:
- 1tbsp chili flakes
- 1.5 tbsp viniger
- 1tbsp sugar
- 1tbsp toasted sesame oil
- 1/2tbsp sesame seeds
- 1/2tbsp minced garlic
- 1/2tsp salt
Instructions
Measure and mix the dressing. Cut the cucumber into bite sized pieces. Pour the dressing over the cucumber directly before serving.
Pro tip: I usually mix the whole dressing, but only use 1/3 of the cucumber for one portion of salad. Only use a third of the dressing and keep the rest in the fride to use somwhere within the next week.
