Kritharaki Vegitarian

A vegetarian version of kritharaki. The soj granular does not work quite as well for this as it does for bolognese, but is still a very useable substitute for this meal.

Ingredients

Soj granular:

  • 200g soj granular
  • 200g water
  • 1tsp MSG

Main:

  • 3tbsp oil to fry
  • 2 onions
  • 500g kritharaki noodles
  • 1tbsp oregano
  • 1tbsp Gyros Spice Mix
  • salt to taste (ca 1 tsp to start with)
  • 100g tomato pase
  • 700g vegetable broth

Toppings:

  • 150g cubed feta cheese
  • 200ml sweet cream

Instructions

Mix the soj granular, water and MSG and let that soak.

Cut the onions fine and fry them golden in some oil. Add the rest of the main ingredients and let that cook until the noodles get softer (but still have a good bite).

Now mix in the granular and fill everything in a preheated baking form. Distribute the cubed feta cheese and press it in a bit. Top everything off with the sweet cream.

Let everythinig bake for 30 minutes at 180 degrees.

This version actually held its form pretty nicely once cut.
