Fried Noodles

This is my first attempt on making fried noodles. It took a few tries but now the recipe is where I wanted it to be. Resulting in a fat, heavy unhealthy but delicious dish.

Ingredients

  • 1 white onion
  • 2 green onions
  • 200g fresh bean sprouts
  • 200g rice noodles egg based noodles

Sauce:

  • 1 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tbsp rice vinegar
  • 1/2 tsp white pepper
  • 1/2 tbsp chili
  • 1/2 tsp MSG

Instructions

Cook the noodles until they are nearly through (bit less through then aldente). Mix the sauce, wash and cut all other vegetables. Oil and preheat the wok. It should be steaming hot before adding roughly 1/4 of the noodles. Fry them with one tablespoon oil. Let them fry on one side before flipping them. Then remove the first batch, let the wok heat up again and repeat the process. Once all noodles are fried, stirfry the vegetables for half a minute to a minute. Then add the noodles and top them with the sauce.

Tips

  • rice noodles are not the best idea to do this. I let them soak until they were nearly done and then fried them. This part worked great, though they stuck together afterward forming big clumps. Egg based noodles should work better.
  • bean sprouts are the prefered sprouts, though bamboo also worked pretty well
