Elderberry flowers have an amazing taste. Lots of people know that you can make drinks from them, however you can also use them to make an amazing dish. As you need elderberry flowers however this is very seasonal.
Ingredients
Dough:
- 100g all purpose flour
- 2 eggs
- 30g butter
- pitch of salt
- 125g mineral water Others:
- 10 fully grown elderberry flowers
- oil to fry them
- powdered sugar for topping
Instructions
Mix all ingredients for the dough together and let it rest for 30 minutes. After that whisk the dough again for a minute or so. Heat up the oil. To see when the oil gets hot enough I add a drop of dough. Once it starts bubbling heavily the oil is hot enough. Reduce to medium low heat and start frying the flowers.
Dip each flower into the dough so it is fully covered on the outside. It does not matter if the middle upper side is not covered in dough. Usually the flower will form a dough lump. When placing them in oil, gently dip them in and pull them up a few times (as you would do with a tea bag) and they will open up.
Then drop it in and fry them for about 5 minutes. Place them on a paper towel afterward and let drip off the oil before serving them with powdered sugar.
Tips
You can use beer instead of mineral water for a distinct taste. I did once use kombucha as I did not have neither and it worked very nice as well.
Washing the flours up front will reduce their taste by a lot, so I usually skip that if possible. If you do wash them, do it early enough so they can dry before frying! Wet stuff and hot oil do not go well together.
