This chickpeas stew is super fast to prepare. To be honest, its not the most impressive dish and it does not have the wow-factor other dishes have. But its still satisfying and delicious. As it is so easy to prepare this is something that would work great in combination with other dishes for a buffet style dinner.
Ingredients
- 3 cloves garlic
- 1 onion
- 1 can chickpeas
- 1 can tomatoes
- 1/4 tsp cumin
- 1/4 tsp cinnamon
- 1/4 tsp thai chili
- 1 tbsp vegetable broth
- 150ml water
- 1 tbsp ginger spring-onion oil
Instructions
Start by chopping the garlic and onions. Preheat some oil in a pan and fry the onions until it looses colour over low heat. Add the garlic. Let that fry for about a minute. Mix in the spices. Now add the other ingredients and heat it up. Let it simmer about half an hour until it starts to thicken in. I used rice as side dish, though naan bread would be a great alternative.
