This version of potato wedges uses schmalz made from left over chicken skin. It is an amazing and delicious example on how to prepare a great meal out of something that often does not get used and thrown away instead.
Ingredients
- 1kg potatoes
- 3 tbsp chicken schmalz
- 1 tsp salt
- 2 tsp sweet paprika powder
- 2 tbsp semolina
Instructions
Cut the potatoes into equally thick slices and put them in a bowl. Mix the spices and schmalz together. Add the potatoes. Stir until potatoes are fully covered. Afterward add one tbsp semolina. Mix a bit and add the other one. All potatoes should be covered equally. Put the potatoes on a baking tray and bake them (in a pre heated oven) at 200 degrees for ca. 45 minutes.
Tips
If you do not have enough schmalz you can mix it with other oils. I went with 1 tbsp schmalz and 2 tbsp rapeseed oil once. The chicken taste is pretty decent but still noticeable and delicious.
