Cabbage spätzle is a really simple but delicious austrian meal. For my version I’m using brussels sprouts instead of cabbage, though that is optional. Use whatever you have at hand.
Ingredients
For 2 portions:
- spätzle from 400g flour
- 250g brussels sprouts
- 2 big onions
- 50g butter
- 2 garlic cloves
- salt & pepper to taste
- bit of chili
- optional: bacon
Instructions
Prepare the spätzle.
Quarter the brussels sprouts, peel the onions and chop it roughly. Melt the butter and add the onions. Let them fry for a bit at medium high heat. Once they start to get soft, add the sprouts, finely chopped garlic, some chili and salt and pepper to taste. If you want you can add some bacon. Note that I usually add mine quite late as I don’t like it super dry in this dish.
Tips
You can use normal cabbage instead of brussels sprouts. Though you have to be careful as this will get too soft very fast. As it has a bit less intense taste you might want to use a bit more cabbage than you would use brussels sprouts (300-350g maybe).
