Originally we wanted to make “Onion Cake”, though we ended up with lis mashup of various different dishes. Thanks Franzi for the ideas.
Note: in the pictures I made more dough than is listed in the recipe. I used 400g base flour but reduced it to 300g afterwards. If you want to use a whole baking tray you might want to use 400 (and there for increase the filling a bit).
I used a baking tray roughly XXXXX cm in size.
Ingredients
Dough:
- 300g flour
- 185g luke warm water
- 15g fresh yeast
- 1 tsp sugar
- 6g salt
- 2 tbsp oil
Filling:
- 3 eggs
- 250g sweet cream
- salt & pepper to taste
- dash of mace or muskat
- broccoli head
- 200g smoked salmon
Instructions
Dough: Mix some of the flour, all of the sugar, water and yeast together. Let that rest for about 30 minutes. The mix will rise quite a bit so use a big enough vessel. Now add the rest of the ingredients and knead it together. Cover it with a wet kitchen towel and let it rest at a warm location for another 30 minutes.
Filling: Cut the broccoli head fine and steam it for a few minutes until it is soft. Let it cool down a bit before mixing everything but the salmon together
Forming: Oil the baking form/tray. On a lightly oiled surface roll out the dough. If it is too sticky you can do some slaps&folds, let it rest for 5 minutes and then roll it out.
Once that is done lay the dough in the baking form. It should cover the whole form and the sides. Now spread the salmon on the dough evenly and top it with the filling. Now fold in the excess dough.
Bake it for 30 minutes in a preheated oven at 200 degrees or until golden brown.
