It is zucchini season and time for one of my favorite zucchini based recipe. Filled with mozzarella, breaded and fried zucchini. Thanks for the homegrown goods Christine.
Ingredients
- 1 big zucchini (small works but is way more annoying to bread)
- 1 big egg
- 1 mozzarella
- flour and bread crumb
- salt and pepper
Instructions
Slice the zucchini and the mozzarella. Season the slices with salt and pepper. Fill two slices of vegetable with one slice of cheese.
Once done, bread them. In case you have never breaded vegetables before, check out this recipe for detailed instructions. Always start with the edge and follow with both flat sides. This allows flour/egg/crumb to get into the open sides and will ensure that the cheese will stay inside during frying.
Tips
Serve with some salad and yoghurt-mustard sauce.
