Chili-Garlic Marinated Cheese

This is not really a recipe but more a guide line on how to make marinated cheese. Thanks Deniza for the example batch and the instructions.

Ingredients

  • 3 small camenberts
  • 2 red onions
  • 5 chilies (dont use too hot ones)
  • tsp of pepper corns
  • garlic/chili paste
  • sunflower oil

Instructions

Cut the Camenberts in half (to get two thin circles). Mince garlic and mix it with chili flakes. Spread that paste on the bamenbert halfs, then put them back together and cut them again (to get two half circles). Peel and cut the red onions into thin stripes. Now layer all ingredients into a big jar, topping everything off with sunflower oil. Let this rest for a week in the fridge.

The original instructions were to eat it 4-7 days afterwards, though personally I really prefered the taste after 2 weeks in the fridge. Note that the cheses ‘melted’ a bit in the oil after a week, so you might want to eat it before, depending on how you like it.

  • try different fillings like pumpkin seed paste or basil pesto
  • try diffenent cheeses
  • try prefermented garlic to make it less intense
