Peanut Butter Cereal

This recipe is the result of my first attempt of making granola bars. And while I failed miserably with the granola bars I figured out a quite distinct cereal mix that I have never done before.

Ingredients

  • 500g oatmeal
  • 200g nut mix
  • 150 salted peanuts
  • 20g sugar
  • 5 tbsp coconut oil

Instructions

Mix the sugar and the coconut oil in a pan and heat it over medium heat. In the meanwhile, blend the salted peanuts to peanut butter. Once the sugar mix reached temperature, add the peanut butter. Stir until it comes to a light simmer. Lower the temperature and let it simmer for one minute. Remove the pot from the heat and add all other ingredients. Depending to you liking you can crush (some) of the nuts up front.

Put the mix in a fire resistant vessel and bake it at 180 degrees for 15 minutes.

Tips

Depending how sweet you want this mix to be you can add more sugar. Adding about 80g instead of 20 will result in the typical store bought cereal sweetness range.
