Breakfast cereal. One of my most used recipes over the year.
Ingredients
- 1,5kg oatmeal
- 700g nuts (almond, walnut, coconut rasp,…)
- 150g coconut oil
- optional: spices (cinnamon, cocoa,…)
Instructions
- let the coconut oil melt in a big pot on low heat.
- crush the nuts (for example in Vitamix or food processor) and add them to the pot.
- mix in the oatmeal
- preheat the oven to 175 degrees C
- put 1/3 of the mix on a baking tray and flatten it
- bake for 10 minutes, stir and bake for another 7 to 10 minutes
- the cereal should be slightly golden, but not too dark or the nuts will taste burned.
- let it fully cool down before filling it into storage containers
Tips
Do not add dried fruits before baking as they will burn. add them afterward.
Serve with fruits and milk or yogurt.
