Tortillas is not the flatbread one can make, though it is so worth the work. I tried it quite a few times but this is the first time I got the recipe down.
Ingredients
- 250g fine wheat flour
- 150g boiling water
- 5g baking powder
- 5g salt
- 40g butter
- 10g lard
In regards to the lard. You don’t need actual lard. For the first batch I had some pretty fatty speck at home. I cut it into small cubes, added a bit of oil and let it fry until the pieces got crisp. I sieved the oil and used that as lard. Though in the end it was more bacon flavored rapeseed oil. But thats a good think. You can use whatever you have at home to generate some taste full oil. Obviously if you have enough fatty meat at home to make actual lard it would be better. Though I usually don’t.
One thing Ill try for sure is to use Chicken Schmalz instead, once I have one at hand again. Be creative.
Instructions
Mix all ingredients except the butter and lard. Let this rest for an autolyse for about 10 minutes. Afterward mix in the fats. Let the dough knead for about 5 minutes.
Split it up into 6 equal pieces and form little balls. Shaping will make rolling out afterward easier, so do not skip this step. An easy way to shape balls can be seen here in the easy method section.
Now cover them and let them sit in the fridge for at least 2 hours. The longer the rest the easier rolling out will be.
Once you got your fillings done, prepare some flour on your working surface. Press one ball flat and ensure that it is well covered with flour on both sides. Afterward get it on a non floured surface and roll it out.
Preheat a pan. Without oil add the tortilla. If the pan is hot enough it should get brown spots after 30 seconds. Flip it and let it brown there as well. Remove it from the pan and cover it. That part is crucial to keep them soft and tender. An easy way is to use one plate to store them on and a second one inverted to cover them.
Once all tortillas are done fill them to your liking.
The ones in the picture I filled with:
- ground pork (salt, pepper, cumin, chili)
- youghurt (garlic, salt, pepper, sugar)
- letscho (store bought.. shame on me)
- mozzarella
- paprika
- salad
But you can fill them with whatever you want.
Testing
This time I was lazy and skipped the autolyse. I measured all dry ingredients and placed them in the bowl. On top I layered thingly sliced butter strieps. Then I poured the boiling water on top of that, waited until the butter melted and then mixed everything together. In addition I had too little butter, so I used half butter half lard (cheap version as described above).
Notes
I tried to use pizza flour and 250g flour was way too little. 300 was fine, though still pretty wet. Maybe 350? Not sure if the original 250g are correct at all (though I did skip the rest time). Also: ghee is a nice substitute for butter. No need for melting it :)
