Sunflower Seed Bread

This is a pretty simple sunflower seed sourdough bread that does not require a lot of steps before baking. If you prepare the dough at night (10 minutes time) you can bake it in the morning (45 minutes baking time).

Ingredients

  • 200g whole grain rye flour
  • 200g whole grain spelt flour
  • 200g wheat flour
  • 450g water (75% hydration)
  • 12g salt
  • 50g rye sourdough starter
  • 2x 125g sunflower seeds

Instructions

Put 125g sunflower seeds aside. Mix all other ingredients until you get a smooth dough. Shape the dough into something similar the form of the baking form you plan to use. Once done cover it with the other 125g sunflower seeds. Try to cover it on all sides before placing it in the baking form.

Let the bread rest like this for about 8-10h covered (or in a closed oven). Once done heat the oven to 200 degrees and let it bake for about 45 minutes (no preheating required).

Next Time..

  • Try to reduce the wheat flour even more
  • Make a spelt/rye only version just to see what flavor goes better with the sunflower seeds
