I recently ran out of bread, though graved for some wheat based side dish to a salad. Usually I go for my fast naan bread in such situations though I decided to try something new. The result was a mix between the naan bread and a tortilla recipe I’m currently experimenting with. And it was delicious!
Ingredients
- 300g fine wheat flour
- 180g milk
- 50g butter
- 7g salt
- 1/8 tsp baking powder
- 1/8 tsp baking soda
Instructions
Cut the butter into small pieces. Mix butter and milk and heat up until butter melted. (Don’t let the mix get too hot, or the baking soda will react strongly when mixing everything together.) Mix everything together. You should end up with a firm, non-sticky dough. Cut the dough into four equal sized pieces and form them to balls.
On a very lightly floured surface, press them flat with your hands as good as you can. Turning them in between does help. Afterward use a noodle walker to flatten them out according to your pan size. If you do not have a noodle walker an empty wine bottle also works very well for this task.
Preheat your pan. On maximum heat, but with no oil (!) place the flat bread in. Wait until the downer side gets golden spots. Turn it and repeat the process. Place the done breads in a wet towel, so they keep soft.
Tips
The milk and butter combination does have a quite intense taste. I really enjoy it, but depending on the main dish butter may not work in your favor. In that case go with olive oil.
I also tried this recipe with almond milk and olive oil. It’s also ok, but it does taste more like a thick tortilla than the original flat bread with butter and milk.
If you have too much dough, don’t make all the breads right away. Rather place the rounded dough dumplings in the fridge and make the flat bread fresh the next day. For me this is the perfect side dish to a quickly prepared salad for lunch in home office. Just preheat the pan while preparing the salad, and you will be done in no time.
You can try to add different herbs into the dough for an extra kick. Especially fresh basil leaves work exceptionally well with this bread. Though as with the butter, be aware that this flavor might not work with every main dish.
