My first try on gengerbread. Not 100 percent there yet but a very solide base.
Ingredients
V2
- 150g full grain rye flour
- 175g spelt flour
- 100g ground hazelnut
- 100g ground almond
- 100g cheap selfmade vanilla sugar
- 200g honey
- 2 eggs
- 3g salt
- 50g butter
- 1tsp baking soda (6g)
- 10g gingerbread spice (ca. 2 flat tbsp)

- 150g full grain rye flour
- 200g spelt flour
- 100g ground hazelnut
- 100g ground almond
- 100g cheap selfmade vanilla sugar
- 200g honey
- 2 eggs
- 3g salt
- 50g butter
- 2tsp baking soda (12g)
- 2tbsp (ca.9,2g) gingerbread spice
Next time: reduce baking soda and flour a bit
Instructions
Mix everything together, wrap it in foil and let it rest in the fridge for at least 12h. Then knead it a bit per hand, add flour if required. Roll it out roughly 3/4cm thick and cut it (i just used a smalle glass to do so). Place them on baking paper, brush them with egg and add almonds on top. Preheat the oven to 180 degrees. Bake until golden brown (roughly 10 minutes)
